Tub O Sweet Potato Pie Recipe

For the topping:
1/4 cup + 2 Tbsp. flour
1 1/2 Tbsp. dark brown sugar, packed
1 1/2Tbsp. soft margarine
1/4 cup + 2 Tbsp. chopped pecans
For the pie:
4 1/2 cups mashed sweet potatoes
3 egg whites, lightly beaten
2 egg, lightly beaten
3/4 cup evaporated milk
2/3 cup dark brown sugar, packed
3 Tbsp. soft margarine
1 Tbsp. vanilla
1 1/2 tsp. grated orange peel
1/2 tsp. salt
Topping: Drop margarine in small bits into flour and brown sugar mix. Rub together with fingers until crumbly. Add pecans, mix, set aside.
Pie: Preheat oven to 350 degrees. Grease 2 or 3-quart casserole dish or 10″ square baking dish.
In a separate bowl, mix egg whites, egg, milk, vanilla, brown sugar, margarine, orange peel, and salt until combined then add sweet potatoes and blend it nicely.
Place potato mixture in casserole. Sprinkle brown sugar-flour topping on top. Bake it for 30 to 35 minutes or until it becomes nice golden brown.
