Tub O’ Sweet Potato Pie Recipe

For the topping:
1/4 cup plus 2 tbsp. flour
1 1/2 TBSP. dark brown sugar, packed
1 1/2 tbsp. soft margarine
1/4 cup + 2 Tbsp. chopped pecans
For the pie:
4 1/2 cups mashed sweet potatoes
3 egg whites, lightly beaten
Two eggs, lightly beaten
3/4 cup of evaporated milk
2/3 cup of dark brown sugar, packed
3 tbsp. soft margarine
1 tbsp. vanilla
1 1/2 tsp. grated orange peel
1/2 tsp. salt

Topping: Drop margarine in small bits into the flour and brown sugar mix. Rub together with your fingers until crumbly. Add pecans, mix, and set aside.
Pie: Preheat the oven to 350 degrees. Grease a 2 or 3-quart casserole dish or a 10″ square baking dish.
In a separate bowl, mix egg whites, eggs, milk, vanilla, brown sugar, margarine, orange peel, and salt until combined, then add sweet potatoes and blend it nicely.
Place potato mixture in the casserole. Sprinkle the brown sugar-flour topping on top. Bake it for 30 to 35 minutes, or until it becomes a nice golden brown.
