Cookie Cutter Vegetarian Sandwiches Recipe

- Chickpea spread
- 24 oz. chickpeas (3 8-oz. cans), rinsed and drained
- 1 1/2 stalks of celery, minced
- 1 medium onion, minced
- 11/2 tbsp. of mayonnaise
- 11/2 tbsp. lemon juice
- 11/2 tsp. fresh dill weed
- salt and pepper to taste
- 24 slices of soft white bread, crusts removed.
Place drained and rinsed chickpeas in the bowl of a food processor or hand mixer. Mix on medium speed until the chickpea mash becomes a thick paste.
Add the rest of the ingredients and salt and pepper to taste.
Spread the chickpea mix onto the slices of bread to make sandwiches. Cut the shapes out of the sandwiches with a bunny, airplane, or heart-shaped cookie cutters. Garnish the bread with pimentos if desired (for the eyes on the bunny or the windows on the plane).
