Apple and Mint Duck Breasts Recipe

- 8 duck breasts
- 6 apples (Macintosh, Golden Delicious, Red Delicious), skin on, cored, and quartered
- 6 ozs white wine
- 6 oz. duck stock
- 6 oz. heavy cream
- 1 mint sprig
- 1 Tbsp. chopped parsley
- salt and pepper to taste
Place a heavy frying pan on low heat. Heat completely without oil. Place duck breasts, skin side down, in a pan, and fry for about 5 minutes.
Turn over and fry on the meat side for 3-5 minutes. Breasts should be slightly brown. Place on rack in a roasting tin and Roast it for 375 degrees for 40 min.
Leave 3 Tbsp. duck fat in the frying pan. Add cored apples and cook until brown. Remove apples. Add wine, mint, and duck stock to the pan. Bring mixture to a boil until it’s reduced by half.
Remove duck breasts from the oven. Allow cooling enough to handle. Slice breasts thickly. Arrange with apple slices and cover with sauce. Garnish with chopped parsley if desired.
