Apple and Mint Duck Breasts Recipe
No. of Servings
- 8 duck breasts.
- 6 apples (Macintosh, Golden Delicious, and Red Delicious), skin on, cored, and quartered
- 6 oz. white wine
- 6 oz. duck stock.
- 6 oz. of heavy cream
- 1 mint sprig
- 1 Tbsp. chopped parsley
- salt and pepper to taste

Place a heavy frying pan on low heat. Heat completely without oil. Place duck breasts, skin side down, in a pan, and fry for about 5 minutes.
Turn over and fry on the meat side for 3-5 minutes. Breasts should be slightly brown. Place it on a rack in a roasting tin and roast it at 375 degrees for 40 min.
Leave 3 tbsp. of duck fat in the frying pan. Add the cored apples and cook until brown. Remove apples. Add the wine, mint, and duck stock to the pan. Bring the mixture to a boil until it’s reduced by half.
Remove the duck breasts from the oven. Allow cooling enough to handle. ” Slice the breasts thickly. Arrange the apple slices on top and cover with sauce. Garnish with chopped parsley if desired.
